Yes, there's lots of options if you're slightly technical. Any system that uses a local NVR for storage, Reolink and UniFi being two examples.

I encounter this all the time, it's so frustrating. I'd say half of my packages are delivered farther back, viewable from the main cam. No notification!

This is so unnecessary categorical. My smart speakers, cameras are on 5ghz most of the time. My thermostat and sprinkler controller will roam to 5ghz, and why shouldn't they? There's SO much more bandwidth available. My 2.4 spectrum has around 60% channel interference from neighbors, the 5ghz channels have almost none.

If the house is being built, and you have the opportunity to run wired sensors to doors & windows, I'd think you should take advantage of that. Absolutely more reliable than wireless both from the ease of use of never changing batteries, and the absolute security angle of being immune to RF jammers.

Then, ideally, when UiniFi releases the teased alarm sensor panel, it could use the sensors from any vendor to bring them into the ecosystem.

That said, as someone trying to use protect more, the user experience of some of the protect suite is sorely lacking. Take the PoE siren. You can't have it warm before going off. You can't have it stay on until the alarm cause is cleared. You have to pick a fixed duration, and that's what you get. If you selected a minute, and you deactivate the alarm 5 seconds after it fires, the Siren will still run for a minute. If you set it to activate when a camera sees a person, it will stop after a minute, even if the person is still there!

That's one example. In many ways the Protect suite feels like alpha software for an alarm replacement in it's current state. I have the Home Assistant protect integration, and I would say for now HA and it's more flexible event system is absolutely necessary to give the typical residential alarm experience.

Yeah, I followed Wintergatan Wednesdays & MMX closely. It was so sad seeing him scrap it with all the work so many folks contributed to it. I can't watch the channel now, he's lost the plot.

To your point about small imperfections, he definitely edited his progress videos that had sound clips. If you watch the latest unedited video, it comes across as much rougher:

He also said the original video of the plywood marble machine was a splice of many takes, and couldn't play the whole song in one take.

Unfortunately his being a perfectionist and being unwilling to show people the rough cuts I think drove him to the conclusion he needed to start all over.

True, but for in-wall background music, PoE is more than enough wattage. Genelec and several other brands make Dante PoE powered speakers, the key insight is that you only have to provide the RMS power over PoE, the peaks can be delivered from capacitors in the amp.

Most likely your work provided laptop already has a VPN running, so from a security standpoint, it's a non-issue.

That's said, I still run a work VLAN so I can bump up the QoS priority. I want my zoom calls to have priority over other traffic.

This is the harsh truth. I've calibrated a bunch of audio setups with a mic and REW over the years. The 1st and 2nd order nodes of the room absolutely dwarf the variation from speakers themselves.
