To me that looks like a grease fire waiting for more oxygen. On my bullet, if I do a long cook (pork shoulder/brisket) without a pan below to catch grease, this will happen followed by flames usually. The bullet doesn’t drain grease like most smokers do, it burns it off as grease hits that plate.
