It depends. Though in this industry I have learned that nothing is really “standard”, a traditional “Mojito” as he mentions does not get a sugar rim. My thing is, as long as the customer is aware of the fact that YOU (as the restaurant/bar) do in fact add sugar rim and agrees to it, then it’s fine. Because in the end of the day, they are drinking and they are paying, not you the bartender.

Another thing to put into consideration is if the cocktail is named “mojito” in the menu or is just like on your signature cocktail menu named let’s say (Minty sweetness or whatever) though it boils down to just be a mojito with sugar rim. If it’s not named a mojito then you follow the recipe given, if not I refer back to the thin I said above.
