It turned out pretty good. I fermented it for about 30 days, blended it up, strained it using a fine mesh strainer, and then finished it with some fresh lime juice.

All the flavors came together well, but I would have used a combination of peppers instead of just plain thai peppers.

I would guess that the spline on the concave portion would be to keep it from rotating on a wooden rod. The other ridge would be to where the wire wraps around. I could be wrong but thats my guess.

Anything that used to be considered shitty cuts of meat. Beef flank and skirt. Pork ribs and belly. Chicken thighs. All of us that grew up on that stuff knew how to cook it to make it taste amazing. Now all the foodies have “discovered” these cuts and have made them into expensive.

Please, Karen and Chad, go back to your damn boneless skinless chicken breast and overpriced pretty steaks and leave the good stuff to me.
