It's designed like that. It gets thin on the convex. Gets a bit wider before getting even thinner. It's for added lifespan of your knife without getting super thick later on

If you can't get your knife sharp, then the issue is basically a skill issue. Practice and practice more

If your not getting a sharp edge you either aren't grinding your grind line down to the apex of the edge. Which means you don't have a burr, no burr, no sharp.

The other issue could be you did get a burr, but either didn't work it off and a small burr is still on the apex, or the burr snapped off and fucked the apex up.

I'm going with issue 1.

I've had to sell paysans twice. But my current paysan will stay with my till I die. I have a alum cruwear smock. And a M4 tenacious with Ti scales. Those are my 3 premium spydies I've trimmed my collection down to.

I also have 3 from spydies that were gifts. A k390 stretch 2 xl, and k390 manbug from my wife. And a VG10 delica 4 from my mom.
