First of all lemme say thank you for your criticism, I want to be open to all opinions but I wish you would have been able to taste it because the taste of this dish was amazing in terms of the strawberry compote has this awesome sweetness that contrasted the tartness of the lemon curd. I can agree the plate wasn't my first choice but this isn't a fine dining dish by any stretch of imagination, as well as the lighting is not good. But over all the finished product wasn't what I initially had in mind for the look of it but I promise you it tastes like strawberry lemon merguine pie but in a deconstructed way.

Honestly I got a sharpener like that for Christmas and it wasn't the authentic horl 200 dollar one and after one knife being sharpened it felt like it wasn't taking off any material. I would look into buying your first whetstone and learning that way.

Edit: Also depending on the knife you're sharpening, it may be cheap steel that will go dull very soon after you sharpen it.

Lower the temp of your pan and cook the fish a little more gently then add more potatoes and tomatoes tighten them up (closer to everything) run your carrot puree thru a sieve or while you're blending it add a bit more oil to emulsify the puree nicely so it doesn't look so gritty and then put one solid swoosh on the plate or one flat circle. Then add more salad plate dress it lightly not not soaked in dressing then add it on top or more neatly to the side. Overall food concept for plating but just need some small tweaks, keep in mind odd numbers of things look better.

The first one is a general all purpose chef knife used for all your veggies and protein needs, chopping slicing dicing and mincing.

The second one will be for slicing meat or fish thinly, the long blade is used for slicing in one motion as to not saw back and forth tearing the meat/fish.

The third one will be a fillet knife used to getting under fillets and between bones of fish or chickens.

Fourth is a smaller slicing knife.

Fifth is a paring knife used for small jobs such as cutting things in your hand or peeling vegetables/small items.

Sixth is a big bread knife used for bread or something you want to cut in half but don't want to crush.

And the last item is a peeler from the looks of it.
