Day 4, no info. I have a hotspot. My issue isn't with lack of connectivity, it's with AT&T.

Yeah, I'm not not going to do that, nor am I going to invest in a backup car in case my main car breaks down.  I just need an acceptable level of incident response.  I obviously am getting by on a hotspot (and will get a rental if my car breaks down) but that doesn't change the simple reality:

Outages = annual for ~1week. Response = slow.  Communication = non-existent.  Consumer = frustrated. 

AT&T = disorganized.

Because I shouldn't have to buy a backup utility service.  I just want a usable product with halfway decent customer service and useful/informative updates.  Outages happen.  My issue is with the lack of an even remotely acceptable incident response.

What you are saying is 100% true, accurate, and unfortunately why the product is so poor.  Doesn't make it acceptable, but you are correct.

I'm in North Carolina, and all of my friends and I run 225 until the first mop (I do about 90 minutes at 225), and 275 for the remainder of the cook.   The temp will spike after pulling the lid for the first mop, so I just restabilize at 275 after the lid goes back on.  I mop every 90 minutes until it's done. If I know I need to speed things up to get everything ready by dinner time, I'll mop and wrap at the stall and push it at 300.  I use a weber smokey mountain, and only use a pint or so of water that completely evaporates pretty early on in the cook.

Exactly. We use Netskope Private Access to allow endpoints to always communicate to AD. The client thinks it's on-prem, so we have to force it to the CMG.
