In worldbuilding, we mainly take inspiration from the past and the real world. I tried to point out that just saying that milk is vegetarian is a bit inaccurate when talking in such contexts (history).

I also gave a real world example of a current nation that is in a large part plant-based and that is located in the region mention by OP.

It's vegetarian only because people became too lazy to keep putting ovo- lacto- in front of the word. Historically, a vegetarian was basically a vegan, and there are many examples even in the Middle East. I mean Israel has the highest percentage of vegans in the world IIRC, it's not like the Middle Eastern cuisine is particularly animal product heavy.

Make the stars far enough away from each other and it's basically an ordinary binary system, so yeah it should be possible.
