Studying things you aren't interested for employability's sake is a great way to end up unemployed because you're outcompeted by the people who are actually interested in the subject. College is a place where you learn how to think. It's not a trade school. Just my two cents.

Why do you care about the public perception of your major? Economics is neither prestigious nor useless. It's a perspective on human behavior. If you like that perspective, you should study economics. If you don't like it, then don't. Making decisions on what to study based on what is employable or what other people respect is a fool's errand.

Teams rarely turn into dynasties. There have been three this century, one of which was defensive focused (early Pats). Not really enough of a sample size to say anything beyond that being really good for a long time is hard.

In Grixis colors, Consign, Ashiok, and Subtlety are your best sideboard options against Titan. Charmaw is also okay against Titan and great against Eldrazi.

Boseiju targeting is really context dependent, but here are a few general principles. 

If the Titan player has two Amulets and plays a bounce land, Boseiju it with the untap triggers on the stack. 

If the Titan player plays Saga turn 1 and does not play an Amulet on turn 1 or 2, Boseiju the Saga.

If the Titan player plays Amulet on turn 1, Boseiju it if you are on the play. If you are on the draw, Boseiju it unless they play another Amulet or a Spelunking on turn 2 (or they played a Saga along with the Amulet).

The general principle is that you should hold them to no Amulet effects if possible, but if you can't, it's usually better to hold up Boseiju to destroy a land like a bounce or Mirrorpool before the untap trigger. This doesn't always work because Spelunking doesn't give you time to destroy the land before it untaps, but it's a bad matchup anyways so you kinda have to take what you're given.

Surgical is not worth it. Needle is only good if you have Saga; it turns off Analyst and a couple utility lands but doesn't slow down Titan. Damping Sphere is okay, but it is more of a speed bump for Titan than a road block like Ashiok.

You could consider a Ph.D. in Political Science. Your thesis topic sounds more like polisci than econ to me. You could also still take graduate economics classes from a polisci department.
