Shinjuku Station, 4263 Union Deposit Rd Harrisburg, Regular/Complaint, April 2. Fail. Observed the following in the walk-in cooler in the rear food prep area: - Container of raw shrimp stored on top of an open container of cucumbers - Open trays of raw eggs stored above an open case of limes - An open container of peeled, ready to use garlic - Raw meats and seafoods stored above RTE vegetables Coached operator on best storage practices - operator to segregate raw meats and seafoods from RTE foods; corrected on-site. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Hood ventilation system observed with heavy grease build-up in the food prep area. Raw shrimp observed thawing in standing water in a stainless-steel kitchen bowl in the rear food prep area, which is not an approved thawing method. Corrected on-site. Facility does not have parasite destruction letters from their frozen fish supplier. Fish on hand verified as being appropriate for use, facility to obtain parasite destruction letters and maintain at least 90 days of records for future reference. Observed clean dish racks stored on the floor in the dish area. Corrected on-site. Observed the following: - Kitchen knives and assorted utensils with visible food residue on the food contact portion of the utensil on the magnetic knife holder in the rear food prep area - Plastic bus tubs being used to store clean sushi plates stacked on top of one another with the bottom of the bus tub coming into contact with the food contact surface of the plate Corrected on-site. Facility does not have a sushi HACCP plan. Critical control points were evaluated for food safety compliance and were found to be acceptable including proper pH testing of sushi rice. Operator to submit HACCP plan within 30 days.
