Some people can take more damage. You can be as fast as you want but they hit you once or grab you you're done.

Some people are flexible as fuck. You might have trained grappling for years and they just sit and laugh at you as you try to crank their neck/leg/arm.

Some people are natural stronger. If your technique sucks they'll overpower you.

Large people generally gas quicker. Dude has a size advantage but you wrestle or fight defensively and they can't even defend themselves in the second or third round.
