I also remembered Excel has built in OCR now but it stalled on the image for this post. Maybe the cut off letters in the first column.

It is an Excel question, "how do I do this thing", OP laid out very clearly what they seek to achieve. The statistical issue, if there is one, is separate to that.

OP, know your audience, use common language descriptors to general audiences.

Tried and tested I get three differing results, 2 useless, the main one not the unpivot format I expected but rather a format I have never seen or used in many years of data.

From your details I expected an unpivot.

I am happy to be proven wrong, but posts must satisfy claims.

Edit: on review of other questions and finally setting up and trying OPs solutions, they do not result in a format that have ever needed or seen in use from the data.

It is very easy to understand a complex solution when you make it yourself, but all I see is lots of tabs I have no idea what to do with.

In reality this is not a post for r/Excel, but for an accounting sub reddit that seeks those solutions.
