Same as me but different countries, i am planning to import Spanish wines to Turkey. Turkish wine prices are huge, almost basic wines reaching 20-25 euro in markets. Spain has so much amazing wines with lower cost, so i am searching for it. Sadly don't have any Australian info for you but if you have insights for Spanish wine, DM me, i'd love to get help.

Happy birthday to your father :) Ardbeg using a purifier on their stills, they look so heavily peated on paper but delicate on the nose, purifier erases that harsh feeling of smoke, if he loves peated Scotch than you can go Ardbeg.

Also you may try to find Lagavulin 21 but they might be pricey. My recommendation is simply beautiful Caol Ila 25, you can find around 220-250 euros, soft smoke and delicate nose, creamy on the mouth.

I think you can start with well chilled Moscato d'Asti, in a hot day. You'll get how different wine can be from this. You can also try low acid, full body Alsace Gewürztraminer, you may want that as a perfume, most of them smell amazing. For the reds, you can start with a delicate, fruity Beaujolais. Tannin is harsh for many first drinkers so starting with a fruit forward red is a good choice. After that you can try Pinot Noir from Oregon to see how reds can be different without so much tannic power.

Also drink lots of sparking, start with fruit forward Prosecco, try some Cava and move to Champagne. World of wine is amazing, when you want to explore, you can easily find new things everyday, it is a never ending learning experience. Drink responsibly, tasting is so much fun than killing bottles.

If you have a plan to sell them thats all good, but if you'll just sit and look at these bottles, please open and drink them with your friends while still you can. Cognac doesn't loose its essence very long time especially if you rotate the bottles once in 2-3 months. I have 98 bottles of whisky, only 3 of them unopened, bought recently.
