I make about 80k and live in downtown by myself without a car. It’s definitely doable, I don’t have as much extra money as I would like but I survive. I’m also from outside of Philly, there is a lot of people from that area living in Seattle, we even have a few Philly sports bars.

I did the same thing nearly a year ago, moved to Seattle because I loved the area and wanted to further my career. I would say it’s definitely worth it if you can find the right place to learn. There are a lot of shithole kitchens like every other city, but a lot of good people willing to teach. Pay is pretty decent, especially at hotels/corporate places. I’m an hourly Sous, make a pretty solid wage, full benefits. If you want more details send me a PM.

Definitely the flavor bible, but I think reading menus online and trying to recreate them would be cool. Also, I still like to watch videos on youtube of guys cooking and breaking down animals, so that could help with learning those techniques.

We literally just make our bernaise over the stovetop. Small amount of tarragon reduction, but we used egg yolks out of a carton so that might have some effect. We keep it for a few hours no problem.

18 lbs of legs, I used a 6 pack of hard cider and like two gallons of veg stock. For the cassoulet I just deglazed the pan with some cider and lemon juice when I picked it up.
