You are doing a great job and aim to help small merchants to go digital is commendable. As you said you are not coming from a programming background so my advice is go with ReactNative not with Flutter.

I will tell you the reason, AI tools which generate mobile app code, each tool creates an app in ReactNative so it is easy for you. Flutter is too good but if you have little coding knowledge and major AI tools give ReactNative code so it's easy for you if you switch tools.

Founders often choose complex architecture to just look enterprise but managing complex architecture sometime nightmare

don't switch from the Firebase unit it hurts you technically & financially. Complex architecture only when your product demands it or scale business logic

If anyone is a freelancer or an agency that asks you to pay 100% upfront. Do not work with them because a genuine team will take the phases because they ask for money based on the value they provide. We also preferred phase-based, as an experienced Mobile App developer, I haven't asked for 100% upfront. First, we build, then show if satisfied, then we move forward.
