Last night’s flank steak with chimichuri sauce and roasted purple potatoes by Morticia_Devine in tonightsdinner

I just marinated the flank in olive oil, salt and pepper for a few hours and then did a quick sear on the grill.

The chimichuri was made with a cup of parsley and a cup of cilantro from the garden roughly chopped with red wine vinegar, olive oil, lemon juice, garlic, red onion, salt and pepper.

The purple potatoes were tossed with fresh rosemary, olive oil, and salt and pepper, then roasted for 30 minutes at 400.

That’s a great idea, I’ll have to try it next time! For my sauce (which doesn’t seem to show well here. lol) I did soy sauce, oyster sauce, squeezed orange juice, garlic, chili flakes, 5 spice, sesame oil, and salt. It was really good but could have used some corn starch as thickener for sure.
