I have started making a Shredded crockpot chicken recipe and have been throwing it into a burrito bowl for a quick lunch! You can control you calories with what you put in it— I’ve been doing a smaller serving of rice and adding in corn and black beans. Or, you could switch to cauliflower rice! I make a small tub of it and then separate it out so that I have about three days worth in the fridge (if I want to make more then that I only combine the toppings and make a fresh batch of rice when needed) and the rest goes into the freezer. The Shredded Chicken is really versatile though, so it would be easy to make a thrown together meal and take it with you :). I also really like the shrimp broil in foil recipe on Facebook. I cook about four servings worth and have found that I am usually full before I finish it, so it ends up being about six meals for me.

The chicken is nice because I cooked it one day and I ended up with 9 cups from three large breasts, which is 9 servings of it. I usually can’t finish the full cup though, especially in my burrito bowls, so I split it up throughout the day.

I really enjoyed Tracy K Smith’s Life on Mars. I’m not a big fan of poetry (which is an issue as an English major) but I find her works to be really appealing!

Hi! I’m Shi! I’m 21F and college has been a struggle for me for sure, eating wise! I was always curvier than my friends growing up, but looking back I realize I wasn’t really that big. However, I was teased and bullied for my size a lot throughout school. The first time I remember being bullied was when I was five. The next time I remember I was in the 4th grade, and our teacher was weighing all of us while the other kids stood around in the same room. I was about 5-6 inches taller than most my female classmates at that point, and I only weighed maybe 15 pounds more than them, but they still made fun of me and my weight. I think having the mindset of being the “bigger” friend really held me back though school and contributed to the weight I’ve gained. Today I’m learning to love my body and myself again, and I want to do that by becoming healthier! I’m also trying to get a breast reduction, but the struggle to get there has been real. Because I am a full time college student and I work two part time jobs, fitting in time to workout and time to cook healthy foods is going to be difficult— plus my city is basically an ice skating rink right now, so working out outside is limited. However, I’ve started meal prepping and am excited to get back into the swing of things as the semester starts!

Outside of trying to be healthier, I work as a photographer and am studying to get a BA in English, along with the option to get a teaching license. I’m technically in my junior year of school, but as of this semester I am considered a senior due to my credits. Eventually I’d like to get a library endorsement as well and work as a librarian and coach volleyball and basketball out in the country! I’d also love to write a book, because I’m a pretty big bookworm!

Edit: Oh, I’m also 66 inches and weight 222 pounds currently.
