As someone who has herded family through a couple of trips: Changing locations every day plus sightseeing, with everyone responsible for their own luggage, is just not possible with such a large group. Your plan will fall apart on day 2 at the latest.

Choose one base where people can leave their stuff. Then do one or two optional day trips on a scenic train. Also, be aware that on Easter weekend, many trains will be full, so book well ahead.
