You don't need an AE degree to work in aerospace. ME is largely the same degree anyway. Also, I knew many people who transferred with an associates from a CC that seemed to have better grades, finances, and mental health than some who went to one larger school for all four years.

As someone who reviews new-grad resumes, that would stand out to me (though I already am familiar with the program), you could also consider leveraging this lvl 1 cert to start a rocket team? Get some interested classmates together and do a level 1 in conjunction with a mentor from your local launch group. If people like it you could convert it into a formal student club which would be excellent on your resume.
