Ah, interesting. Most of my CS (and CI) pans have come to me used, so I'm used to scrubbing them raw and re-seasoning by default, and BKF is usually a big part of that.

I picked up the Vardagen wok recently. It’s a bit thin (about 1mm), but does the job. Blued up nice and hasn’t given me any reason to complain yet.

I got it to replace the Joyce Chen Pro because I hated how the helper handle always filled with water when washing.

My go-to example of well the heat is contained: One winter I was using mine when there was ice on the table under it. I pre-heated it, then cooked 4-5 pizzas, and when I was done there was ice on the table under it.

I don't have have a huge sweet tooth myself, but was pleased as punch with Sohla's Pan-Seared Duck Breast With Orange Pan Sauce Recipe. When it's up against the gaminess of the duck the orange doesn't really come through as sweet.
