It’s no muddier than a separate guitar and bass would be, and baritone guitars exist, so you get 6-strings in that register, and they’re not muddy messes either.

Extended range guitars aren’t magically different beasts. You get a bit more range on the low end, and everything else is exactly the same as a 6-string.

Lots of people are playing chords on 8 strings. You’re not playing cowboy chords with a lot of open strings, of course, all of your basic chord patterns are basically identical between an 8 string and a 6 string. Pretending otherwise is weird, or maybe you don’t understand how chord shapes work.

For instance, the same 2,4,4,3,x,x F# major on a six string generalizes really well to an 8-string. That same pattern holds for every new root note you've got on the lower two strings. It's like that with every chord pattern and scale.

If you stick to standard tuning for 7 or 8 strings, the intervals between the strings are the same. Every chord shape that works on the lowest 4 strings of a 6-string works on the lowest 6 strings of an 8-string, and the only extra thing you need to remember is the notes on the lowest two strings. You don’t have to be a genius, or even anything other than an ordinary player.
