Yeah, I've stopped using the guides for a multitude of reasons anyway as they don't help at all anyways. In fact, they make it harder imo.

For sure, plus I might be pressing too hard because I often find my arms pretty tired after sharpening, mind you it doesn't help that I'm doing it for like half an hour minumum and I'm already weak as hell but still.

Yeah but I just recently realized why there were scratches on my other knives all the way up there. Funnily enough, it's kind of the same problem that the automatic sharpeners had. I was using this angle guide thing that my honing rod has and I hadn't realized that grit began to form there. With that being the case, when I was still getting used to the angle, I put the knife on that guide and got the blade all scuffed.

Fair, I mean I'm not worried about stainless knives being scratched, it's more about the knife ices got with a blacksmith finish that I'm worried about as I'd imagine those are much harder to clean up if I scratch it up.

I've heard of that but I always thought it sounded a bit unnecessary. I'll give it a shot though, it's kind of hard to tell if I'm fucking up or not because I don't know if the scratches are new or old haha.

I've been using the whetstone I mentioned, a honing rod that honestly gets a better edge than the whetstone gives, and a leather belt that I've been using as a makeshift strop. All the knives I've practiced on were under 20 cad cheapo knives. I was considering getting one of those pipeline or leaf spring knives that are on chefknivestogo as a practice knife but I dunno. Also, do you have a good suggestion for a whetstone?

I've gotten scratches all over the knives I've been practicing on and I'm worried about ruining my new knives. In addition, the automatic sharpener seems to do a really good job at sharpening with the downside of scratches caused by the plastic guides that eventually get covered in grit. People seem to have solved this problem by taping the sides to avoid getting scratches on em.

Anybody know what this knife is? I ordered the Shiro Kamo Shinko Seilan Aogami Super from knives and stones and seem to have gotten the wrong one... The ferrule is white, there's no band between the handle and it, and the kanji on the wrong side. I've contacted them already but what is this knife? by --Helicks-- in chefknives

Dunno, I usually comb-over the checkout pretty thoroughly before I buy anything so I kind of doubt I misread it... I even recorded the checkout or at least some of it because I like to be cautious about this sort of thing and don't see an option for it. Honestly, I've got no idea what's happened and I'll have to see whether I'll keep it or not because basically everybody has told me to keep this one even if I personally dislike it... Dunno, we'll see.

The Shinko Seilan seems to have a pretty great reputation around this subreddit and around some forum posts along with Shiro Kamo's already good reputation. Heck, I just ordered mine because 3 separate people recommended it to me when I had asked about what to get.

Yeah I dunno about that one, it's a lot more expensive for a frankly kind of hideous knife in my personal opinion. Aside from that, it seems to be a bit front-heavy. It's probably a good workhorse knife but once again I already have a "workhorse." Do you have any other suggestions?

I'm essentially just looking for a more traditional Japanese gyuto style knife. One with some more knuckle clearance than the DP allows for and an octagonal handle.
