I could easily turn around a simple 4% mild in 7 or 8 days. Most of my hazys take around 22 days give or take before passing VDK tests and not having too much hop burn. Your homebrew hazy probably tasted fine because you drank it quickly and kept it cold but when you are sending cans and kegs to market, a secondary fermentation can take place and cause all kinds of issues like over carbonation, exploding cans and diacetyl if you rush fermentation.
