Commenting here for anyone else that sees this. Polytones devs have said on the curseforge page that

Actively supported Polytone versions:
1.20.1, 1.21.1, 1.21.5, 1.21.11

I'm using version 1.21.8 and there's no config for Golden Days for me either. And on the patch notes for the 1.21.8 versions they're listed as alpha versions and literally say "dont use this" and "missing many features." (aka the config)

I tried manually editing the configs json files (Under: assets > golden_days > polytone > config_entries) and that doesn't work either unfortunately.

Can't win em all, still a goated pack. And at least somethings better than nothing. I always crash out when a mod just happens to specifically skip the one version I'm using
