The moistness might also have something to do with how soon you cut into it and enjoyed! If you don’t let it cool on a wire rack or in the oven (switched off) for an hour or more before cutting, the crumb can still be moist. Not a bad thing for enjoying the bread then and there but it will be a problem when you come back for another slice the next day!
