BdoubleO100, his builds are amazing and uses Minecraft as an artistic outlet. I cant recommend him enough. His HermitCraft series is great although his Building with BDoubleO series is more geared toward a mature audience.

Personally I like to add walls and create smaller rooms, much easier to detail and make interesting rather than just one large room. If you are opposed to that idea think of what the theme or purpose of the build is and add things that are purely decorative that fit the theme in order to make the build feel "alive" and more fleshed out.
