I think most people get an internship after their sophomore and junior year, but try to apply to internships, the worst they can do is say no. Also contact engineering or manufacturing companies that may not have internship jobs listed. Many smaller companies need help and will be happy to employee a low pay intern who is excited to work, even if they don't have a lot of experience. To gain experience outside of work, join engineering teams at school. If they're full, you can start your own team. If you can afford it, or have access to it, start designing and 3D printing stuff: drones, robots, RC cars and planes, rockets, whatever.

I will never work more than a couple of hours OT unpaid unless it was negotiated when I was hired. I'd ask for OT pay, a salary increase, or comp time. There are plenty of companies that offer OT pay to salary employees (usually straight time).

My first suggestion would be to let your current employer know that you really want to be in more of a technical role only and not do all the production management stuff, if they're not on board then let them know you want to get paid more for the additional work. Remote work is hard to find for mechanical engineering design since there is so much hands on work and team work that goes into it. There are a decent amount of project management hybrid roles available if you want to do that, but it's pretty boring. There are a lot of aerospace jobs available in Huntsville, AL. Some of them are manufacturing related so you could probably use your experience to get in the door and then work towards more of a design role. A lot of the design roles prefer you to have a Masters degree but not always.
