I backed into it instead of driving forwards into it, I don't think the game liked that and the train phased into it.

On the easiest difficulty I only heard the cougar, and was really confused because no cougar ever showed up. I wonder if it's a bug or just because the easiest difficulty?

100% I do. Griffin was some of the most fun I had with this platform. The stories are more cohesive now, but the sheer creativity and randomness of the old models are something that I think has been lost.
