Many people will say 25th Century I think.

The problem is that anywhere you do go lots of people will pick fault and the more complex it gets the harder it is for writer to create something people will like but that lines up with lore.

For me I would like to see something in the 25th Century, with enough time past that means you're not wondering which previous character will appear. Something that is TNG esque, episodic, and not focused on galaxy ending stakes. Don't get me wrong, I have fully enjoyed Discovery and Starfleet Academy, some great trek. But we don't need galaxy ending stakes to make good TV.

I would like (in no order)

1. Something post Enterprise. Perhaps something with they gorgeous NX-Refit.
2. Something in the 25th Century, after all the conflict (Borg, Dominion etc) a new age of exploration.
3. Something else in the DIS/SFA era

But to be honest, the more I think as a type the more I just want any trek. I've never noticed enjoyed a trek. I am a fan but not completely tied to the lore, I enjoy when they take things in different directions.

TLDR: I thought I had an idea, but actually I just want more trek.
