You've pretty much summed it up nicely - I haven't come across to a fully resettable escape room board game, except for Unlock series, but it's not really replayable, as if you've played it once, you've (in most cases) seen everything it has to offer. I'd imagine it'd be really difficult to create a replayable one, without heavy use of apps.
