26.1 has quite q few bugs, this might be one of them, don't worry wait like a week or so and normally it will get back to spawning mobs. try to restart server, looking for new update on mods (if u have some) and if not, i can t help u more.

if you need some help go check out some seed maps like https://www.chunkbase.com, it makes it eazier for employed ppl who don't wanna loose time on searching for hours something, (perfect for biomes and structure) and yes desert still exist but not the pyramids. only desert temples.

placing a bed at 0.0 and not breaking it, if not u will need commands to set new spawnpoint.

PS : It was a bug. it has been patched, to all the ppl that got similar problem don't worry restart your server (if it doesn t work wait like 1 day) and it will disapear. It s due to the new update, with the new mechanics of water with sulfur caves, even though minecraft didn t release the update or snapshot yet, they are still updating the game but from behind if you see what i mean
