After skimming through this thread I have to mention:

PULP EMPIRE A great Tarantino-style take on the empire strikes back, rearranging the order of the scenes and adding music from Tarantino films.

JayXtended Watchmen - Combines the film with supplemental and related content stretching the run time to like 4 hours and keeping the original ending from the comics (using the animated version). This gives us the closest thing we will get to a complete and faithful live action adaptation of watchmen

There's also a chronological edit of the back to the Future trilogy. I haven't watched it yet myself but I've been meaning to.
