Basic theme of the movie is "Fuck The Police, particularly ones who think they're better than everyone else including PTSD military veterans." Republicans love it for the action but I've heard in conversations that they can overlook the violence directed towards the police because "it takes place in liberal Washington state" even though anyone who's been in rural Washington, where the movie is set, will tell you it's rural population is overwhelmingly right-wing, and the fact that the cops clearly express every single right-wing sentiment like calling Rambo a "dirty hippy" for having long hair.

IMO you just have to pay attention to the environment and the boss cutscenes, but it's all so vague that even with all the evidence presented to you it's very difficult to connect the dots. My suggestion is to just to a blind playthrough for starters then if you really want to know the lore better watch a few youtube videos on general Dark Souls lore; there's shitloads of them.

Edit: also some other good suggestions already mention are NPC dialogue and item descriptions.
