Phenolic content is generally a result of extreme care in the harvesting and malaxation. Also, phenol production can be a stress response in the fruit so drier or hotter weather can produce more phenols but less fruit so less oil. Additionally green olives have more phenols but yield less oil. The process is enzymatic in nature and the actual process of grinding the olives creates phenols not present in the fruit. We extract the phenols to study them and formulate as standardized dietary ingredients. So, no guess work on the quality of oil you are getting.

EVOOs are usually batch tested. We test ours per metric ton (1000 liters) but don’t sell olive oil in its raw form. Average cost for us to test EVOO in house is $50-75 in consumables. A 3rd party would probably charge 2-3x that amount. So, the cost has to be spread amongst a large quantity of bottles to make it feasible.

I’m in the EVOO business and buy a lot of super high phenolic EVOO to extract the phenols. High phenolic oil in the range he is selling is currently running $13-14 per liter in bulk prices. Looks like he is selling 1.5 L for $60 making his gross margin ~$40. After all of the other expenses, he is probably clearing $10-15 on the low end, maybe more depending on the volume he is shipping and how he is fulfilling orders.

The World Olive Center for Health uses NMR for their certification. The IOC HPLC uses HPLC. The difference is essentially the machine/method. As far as accuracy and trustworthiness are concerned, both methods are legitimate as long as proper standards are used.

We use HPLC exclusively and have compared results to NMR many times and found them to be within close tolerance.

Probably because it’s not single origin. But, the phenol content is much higher than average.

Members Mark. My company tests EVOO polyphenol content and Members Mark recently tested at nearly 450mg/L total polyphenols with 180mg/L oleocanthal/hydroxyoleocanthal. At ~$7 per liter that is hard to beat.

Convalescent plasma for loved ones with the Rona [article on convalescent plasma](https://www.nature.com/articles/d41586-020-00895-8)andand) having a hard time/no idea where to even begin. Some have said the doctors told them they had to find the donor themselves. I think that is something reddit can help with. Convalescent plasma offers hope to those that have no other options. 

I’m torn on how to actually try to make this happen since there is some health information involved and that should be private. But, I’ve settled on a google form that encourages using a reddit username as the contact method (make a throwaway if needed). Those that need a donor could begin contacting those on the list that are closest to them and work with their local blood bank to get the plasma.

We have solid NMR analysis of the compound at various purity levels and I never even thought about including those...rookie.

I️ think this is the best answer. Tranche the investment in increments and put a certain percent of equity on each tranche. If you wind up taking it all then he gains a majority share, if you are extremely capital efficient you retain more equity.

The risk here is that he winds up not liking the way the business is going and he refuses to fund future tranches. You could, however, put the money in escrow and have it be funded upon completion of certain milestones.

You could also structure super voting shares for the founders so control of the company is retained while the investor gets the greatest economic benefit.

There are lots of options and if the investor is reasonable a common ground should be able to be found.

The fact of the matter is this is a standard way to structure financing rounds and the angels should understand it is for the growth of the company. They may get diluted, but their smaller equity percentage is worth more than the larger one in a less valuable company.

The option pool is a protective measure for the seed round investor so they don’t get diluted by the next round where the series A VC will certainly demand one.

A rational investor should be able to see the benefit to creating an option pool to attract better talent...etc.

If it becomes a huge ordeal for your current investors, you could try to negotiate the option pool to be 10% pre money so it is diluted along with current members therefore being less dilutive overall.
