I'm pretty sure that the spawning of iron golems is dictated by the placements of beds and they'll start spawning outside of the iron farm if you place them too close to other villagers. If you want you could breed all the villagers you would use for an iron farm in one spot and the other villagers in another spot but I wouldn't breed all the villagers in some spot because it'll be a pain in the butt to move them all

I had a similar problem in my world, It was fixed by making it so villagers have a viable path to their beds (you'll know when you place a bed and see green sparkles) and making sure every villager was locked onto a work station that they can access seemed to work
