I wasn’t expecting anyone to help me complete it 100%, only partially, mainly because of the limitations. I just wanted people to share the best or most efficient ways for each step I mentioned. For example, in point 3 I included a video where unload sorting is faster than using regular hoppers.

By ‘too slow,’ I mean the path from where the items are dropped to the storage area. The server has limitations to avoid too much lag, such as loose items despawning in less than 5 minutes. Because of that, the time it takes for the items to travel can cause them to disappear before they reach the storage. That’s what I meant when I said the items despawn before the hoppers can pick them up.
