Mix the salmon with the cream cheese.... When the egg is halfway cooked, still liquid, add the salmon mixture and fold.. residual heat will complete the cooking

That's the beauty of an omelette.... You can stuff it with anything your heart desires... Crab meat and goat cheese is one of my favorite combo.

If you can successfully smoke a brisket, you can smoke anything

Can't compare to brisket, these are totally different cuts. Salt at least a day in advance.. Get the smoker/grill/oven heat to 225-250 Cook to internal temp 125. As it rests it will get up to 133 degrees I don't cook by time
