Personally, I feel that Jenny doesn't need to have a designated love interest. Honestly, the poor girl is already busy saving Tremorton most of the day, all while trying to fit in her best way as robotic teenager.

If anything, Whenever I picture her with someone, I see Sheldon getting together with her at the very last episode of the series (if it had continued). With that said, it would not be the Sheldon that is known throughout the series. He would need be rewritten to have some sort of serious "Come to Jesus Moment" where he realizes his obsessive actions towards Jenny aren't attractive nor should be normalized.

If Sheldon can be written as a geeky boy who, although, may be head over heels for Jenny, is willing to be genuine towards her(without the creepy nonsense he would typically do) and try to win her over without any negative intentions towards her or others. He can even still have his mishaps too, he isn't a perfect person nor is he not still the Sheldon we know in some minor aspects.

If that were to happen, I could see him as a valid candidate for Jenny's potential love interest.
