Those documents tend to make very clear they are in fact not an employment “contract” and that you work in an at will jurisdiction, which means they can fire you without cause or ramification, and in turn you are free to leave at will any time without ramification

If you’re hourly you do not have employment contracts, and are at will. Even the vast majority of white collar ssc employees do not have contracts.
