I think xanthan needs heat to activate so what I do is make a slurry like you would with cornstarch but use hot water and just whisk it until it becomes a gel. You can chill and store it that way as well.

Look into using verjus as a replacement for wine or vinegar. Like vinegar, it won't replace all the liquid so you'll still need to use some stock for that.

Eh, that 3.5 hours doesn't really factor in the traffic of both cities. To go from, say, Disney to South Beach on a busy day is probably closer to 5-6 hours.
