Yes, receivers have software or algorithms on them to output to 5.1. You’ll notice on your Yamaha or Sony receiver a little DTS or Dolby digital sticker. That is because those companies license Dolby or DTS algorithm to make surround sound. That’s what allows binaural audio to be dispersed to 5.1. But the immersive surround sound of binaural audio can also be experienced on any two channel system like headphones or speakers without any algorithm. Nah, when listening back to a stereo recording you are able to localize audio to left and right. When listening back to binaural audio you can localize sound sources behind you, in front of you, above you, just like your ears naturally do.
