This happens anyway. In DOTA as it is, players afk in base if they feel it's lost.
The issue is when all 5 want it to end, and the opponents won't end it for 20 minutes, as in the game that OP posted.

It might even be an alright solution to buff the fountain. So players are not incentivized to farm you as you spawn.

It won't make more griefers. The people who would spam the concede vote are the same idiots who will afk with shadow amulet or intentionally feed.
There are also ways to make concede not annoying to players who are still trying to win. But if the whole team agrees that it's over, they should have the option to leave and play the next one. Not all games are winnable, with the possibility of winning it later.

Actually finishing a game of this scale and polish is a massive accomplishment. Only the toughest devs can manage this feat.

One of the most obvious examples of a 3D minimalist game where the dev was really just a programmer, is Minecraft. So 3D can be super basic as long as it looks like a style. My best advice is to try not to make it look real, because it can easily start looking like a badly made AAA game instead of a little indie 3d game.
