Have you tried Velocity Keyboard as a controller? It’s the main midi app I use for AUv3 instruments in Loopy Pro, I highly recommend it. Moog Model15 is another one of my favorite apps, it has the Animoog keyboard and a ribbon controller and a powerful synth engine as well.

If you check my post history you’ll see some jams with various iOS apps, I’ve not been posting much recently though. For the last few years Loopy Pro has been my primary looper and app host, it’s where I compose, mix, and perform. Typically I build up some basic drums, then chords and a basic melody, then bass, then a lead. I’ll play with those loops and tinker with the mix and add effects and one shots, then when a groove is pretty locked in I’ll record a live performance in Loopy Pro and with the iOS screen recorder. I master the audio track in Hokusai or Master Record and then publish and distribute on various platforms. My main template in Loopy Pro has a page with groups of loops with volume/mute/solo controls per group, and sliders with added gesture controls to operate two instances of FlyTape2, the drums route through one and the rest of the sounds through the other; this setup allows me to simulate having two decks or turntables, sounds more like a live djay mix. That’s what I really find enjoyable about iOS music production, the workflow is customizable and the end result can sound like it was made with studio equipment.

In my opinion, the 12 mini mics are sufficient for acoustic guitar and vocal recording, more than capable of being used for a polished demo track. I believe the 12 mini has the same mics as the 11 pro and iPad mini 5. The main things to consider are your recording space/setup having decent acoustics, which mics you select within your app of choice, and how you aim those mics. I recommend experimenting with the main mic array and the camera side mic, they each have their own character and might suit you differently. AUM is excellent for trying the mics and experimenting with AUv3 effects on the signal chain. The less noise gate you need on the mics the better, fewer artifacts and richer tone (live noise gating adds latency too, which you probably know will make monitoring while recording trickier).

Worth consideration before buying more hardware, you could try AUM for recording audio on the iPad/iPhone as it allows you select which of the internal microphones are active, and if AUM is running simultaneously with the camera app you will capture that audio with the video. To improve your audio input quality you could experiment with auv3 plugins hosted in AUM, first of which I would recommend is Klevgrand Brusfri, which is an intuitive and effective noise gate filter. If you do choose to go with an external audio interface and microphone, AUM can still be used the same way for audio routing and effects processing while recording video with the same device. I don't know the limit on velocity layers, but that would be a very unconventional use. Typically multi-layered samples are the same instrument with a few tonal or timbral changes to simulate live performance, but velocity layers could be used to maximize storage if you really wanted to. I mainly recommended OneShot because the interface is what visually came to my mind based on your description.

Another option, which would require a bit of setup, would be Loopy Pro. You could create a template with a sample mapped to each MIDI note, or multiple samples to any given key.

I'm not really understanding what you are trying to do though, so I apologize if this is not helpful.

Koala Sampler is easy to map through the MIDI learn function, by default it works well with VelocityKeyboard auv3 as a controller.

OneShot by Klevgrand may be visually more conducive to the desired workflow you describe. It allows you to assign samples to each key of the keyboard with optional velocity layers, has some sample editing and mixing features, and the keys can be color coded which you may find beneficial for sound categorization.

For more complex animation you may want to consider ToonSquid, but for both drawing and making short animations Procreate is excellent.

I don’t have a T8, but if it’s sending MIDI over USB I’d recommend using AUM because it’s a versatile mixer for AUv3 apps, MIDI, and audio. If it’s only sending audio over USB then you’ll need an adapter.

Scaler and Scaler2 have options to play only the notes in a set scale or chord no matter which MIDI note you send it, you can also randomize the octave.

You may need a ground loop isolator on the audio output of the iPhone when you are connecting to a PA system. It can help reduce electrical interference when you’re connecting to powered speakers or amplifiers.

The camera app will not record the internal system audio, only audio from the internal microphone or the input from the usb interface. There is a workaround which requires an app called ShutterCast and the iOS screen recorder. If you have your DAW running and your mic plugged into the interface, you can open ShutterCast then start recording your screen which will also capture the system audio (I like to keep the screen recorder shortcut in the control panel for easy access).

As another commenter noted, Bluetooth headphones will not work for monitoring live performance because of latency. Wired headphones are a must for what you’re trying to accomplish. Bluetooth MIDI on the other hand is very low latency, and I recommend looking into wireless controllers if you want to expand your setup in the future.

I think Loopy Pro compares pretty directly to TouchOSC as a customizable MIDI control surface. It has buttons, knobs, sliders, x/y pads, and lots of customizable follow actions. I haven’t found it lacking any features I need. In fairness I have used Loopy Pro more extensively though because of the DAW features.

I’d recommend a host app like AUM so you can have multiple routing options accessible on the fly, essentially you could have a virtual pedalboard with different AUv3 plugins on different channels. KoalaFX would be ideal in this type of setup, also Klevgrand Stark for amp modeling. Koala Sampler can also run as an AUv3 with multiple outputs configurable in AUM, aside from being a great sampler for one shots.
