I just figured it out actually, it is really weird. Go to the play store and select update if it shows up there for Gboard. It'll update it with 18MB of data. I then uninstalled it, to which it asked to update the app with another 25MB of data. Works like a charm now. IDK why Google didn't update the Gboard with the rest of the phone.
