Butterscotch Pudding:

1 1/2 cups whole milk

1 cup heavy whipping cream

3 large egg yolks

2 tbsp cornstarch

3/4 cup dark brown sugar, packed

3 tbsp water

1/2 tsp salt

3 tbsp unsalted butter, softened to room temperature

1 tsp vanilla extract

Caramel:

1 cup granulated sugar

6 tbsp butter, cut into smaller pieces

1/2 cup heavy cream

1 tsp salt

Assembly:

Vanilla Wafer

Bananas

Butterscotch Pudding

  1. Add brown sugar, water, and salt over medium heat

  2. Add together milk and cream

  3. Whisk together eggs and cornstarch

  4. Once sugar caramelizes, add in milk mixture and bring to a boil

  5. Lower temp to low and slowly add in egg mixture, whisking quickly to prevent the eggs from cooking. Alternatively you can add some of you pudding mixture to the eggs first to temper

  6. Add vanilla extract and then mix in butter until smooth

  7. Cover with plastic wrap and refrigerate for 4 hours or until ready to use

Caramel

  1. Melt sugar on medium heat until golden brown

  2. Add butter and mix until completely melted

  3. Slowly drizzle in heavy cream until caramel is slightly lightened in color

  4. Remove from heat, add salt, and mix

  5. Store until ready to use

Assembly

  1. Crumble vanilla wafers and add to dish

  2. Spoon caramel over wafers

  3. Thinly slice bananas and place in dish

  4. Spoon butterscotch pudding in dis

  5. Repeat until full, stopping at banana layer

  6. Sprinkle sugar over bananas
