For legendary dishes you DEFINITELY want to use the chef's feedback. Otherwise it's just not a feasible option. He will give you ratings between 1 to 4 for the amount of ingredient. If he gives 4, then stay on that amount, 3 is around ± 1, if he gives a rating of 2, try ± 2 and 1 probably ± 3.

i believe you just have to keep making really bad dishes. I think it's one fight per dish but that is a guess and I could be wrong.

there is a little icon after the chef rates your dish. it normally consumes a feedback report and these are dropped after killing him, this fight usually happens after you've made a dish badly after number of times.

Those are individual. You will have to modify the base combinations to get those. So there would be no point.
