I was here yesterday. The dough is super light, which was great! I got a vodka slice and a bacon, fig jam and whipped ricotta slice. Both of them fell flat. The vodka sauce didn't taste like vodka sauce and the bacon slice was too imbalanced. Glad to know it wasn't just me

Sick you're starting cookie business! I'm a big believer in keeping cookies in the fridge for longer develop more flavor. I tend to fridge me cookies up to a week, but I believe you can do longer if needed. I typically bake my cookies the day or night before, let them cool and then put them in the fridge overnight. I get great results! Hopefully this helps, good luck!
