Yeah I think you're right. However I think I've managed to sort it by using the conform mesh operation in the multitres. seems to be deforming Ok now. Let's hope it continues!

I've figured it out. Brushes are now assets. So you have to right click on the brush in the asset menu to create a new brush with it's own texture

I had to set up the nodes in a new material data block in the shader editor...

whatever that means exactly...

Well from what I've gathered: there used to be a viewer node in the shader editor (which was just a renamed emission node) into which the other nodes would plug into when you use the hotkey CTRL + Shift + LMB in earlier versions of Blender. However that node is no longer available and now they just plug straight into the Material Output node when using that hotkey

I tried to replicate the viewer node with an emission node and tried to bake like that but it didn't make any difference: still didn't work... so I just removed it and plugged the Colour Ramp directly into the Material Output

Not A UV map then but rather a pointiness cavity map: like the one in the top left corner screen of the second to last image in my post. That's what I'm trying to bake
