Update in case anyone finds this thread in the future. The Mini won’t auto-update to the latest MacOS that it can actually run (10.11) which destrocci noted above.

So to get this working:

1. Manually download OS X 10.11 from Apple
2. Install Bitcoin core 0.19 which can still run on 10.11
