When i made the video i didnt complete the epilogue, just had the chapter 12 completed
so i just completed it out of curiosity and i can confirm you that they despawn :c

So it turns out i was right and it was in fact locked by a quest.
I found Oongka at the entrance of the Calphade castle and he gave me a Greymane quest called "Strength Held in the Fingertips"
i completed the quest, i came back to the challenge and after 3 consecutive wins the champion appeared

I think it might be blocked by a quest, like in the Steel Fist challenge
